Chicken with Lemon and Olives
Description
With this combination of olives and lemons, you will definitely feel as if you're in Italy!
Method
Preheat oven to 180C.
Place the chicken in a large ovenproof dish. Scatter the onion, garlic and lemon wedges over the chicken. Add the wine, stock, green olives and capers. Add a splash of olive oil all over and season with salt and pepper.
Bake uncovered for 1 hour until the chicken is very tender. Increase the oven temperature to 220C and cook for a further 15 minutes until the chicken is golden brown.
Garnish with parsley and serve with Creamy Polenta or mashed potatoes and green vegetables.
