Linguine with Chicken, Artichokes and Cherry Tomatoes
Description
This simple dish is easy enough for a midweek dinner, but impressive enough for a dinner party.
Method
Cook the pasta according to the directions on the packet.
While the pasta is cooking, heat the olive oil in a frying pan. Add the chicken and cook over medium heat until golden. Remove from the pan and set aside.
Place the red onion and garlic in the pan and cook over medium heat until golden brown.
Place the chicken back into the pan along with the lemon zest and juice, tomatoes and artichokes. Cook for 2 minutes. Stir in the well-drained pasta, parsley and basil. Season to taste.
Top with the grated Parmesan and enjoy!
