Linguine with Chicken, Artichokes and Cherry Tomatoes

Ingredients

400g dried linguine (spaghetti and fettuccine are also good)
2 tablespoons olive oil
400g chicken thighs, skinned, boned and thinly sliced
1 red onion, thinly sliced
2 cloves garlice, thinly sliced
zest and juice of 1 lemon
250g cherry tomatoes, halved
400g jar or can artichokes, drained and halved
1/4 cup chopped flat-leaf parsley
1/4 cup basil leaves
salt and pepper
1/4 cup finely grated Parmesan to serve

Description

This simple dish is easy enough for a midweek dinner, but impressive enough for a dinner party.

Method

Cook the pasta according to the directions on the packet.

While the pasta is cooking, heat the olive oil in a frying pan.  Add the chicken and cook over medium heat until golden.  Remove from the pan and set aside.

Place the red onion and garlic in the pan and cook over medium heat until golden brown.

Place the chicken back into the pan along with the lemon zest and juice, tomatoes and artichokes.  Cook for 2 minutes.  Stir in the well-drained pasta, parsley and basil.  Season to taste.

Top with the grated Parmesan and enjoy!
