Barbecued Tuscan Chicken with Caramelised Lemons

2 onions, sliced
3 lemons,sliced into thin rounds
1 whole chicken, cut into 8 portions
1/4 cup chopped fresh herbs (rosemary, thyme and/or sage are good)
1 teaspoon salt
freshly ground black pepper
3-5 tablespoons olive oil

The caramelised lemons in this recipe are a real hit.  Encourage your dinner guests to eat them rind and all - they are delicious.  Use a decent-sized roasting dish that will fit all the ingredients in a snug-but-not-crowded way.


Arrange the onion and lemon slices in a roasting dish.

Brown each piece of chicken on both sides on a barbecue hot plate or in a frying pan and place on top of the sliced onions and lemons. 

Sprinkle chopped herbs over and season with salt and pepper.  Drizzle over the olive oil and cover with foil. 

Return to the barbecue or place in a moderate oven (180C).  Cook for 30-40 minutes then uncover - take care to avoid the steam.  Cook for a further 15-20 minutes until the onions and lemons are golden & gooey.

Serve with a simple green salad.
