Apricot Chocolate Wanut Fudge

Ingredients

120g NZ butter, diced

175g chocolate chips

10ml vanilla extract

400g white sugar

140g evaporated milk

20 marshmallows

70g packet chopped walnuts

50g chopped dried apricots

Method

Grease a square fudge tin or ceramic dish with butter.

Put butter squares, chocolate chips and vanilla in a bowl. Set aside.

In a medium saucepan over a medium heat, combine sugar, evaporated milk and marshmallows.

Bring to a boil, stirring frequently. Reduce heat to low and cook for 5 minutes more, stirring constantly. Remove from the heat.

Pour the hot sugary marshmallow mix over the contents of mixing bowl. Beat entire mixture until it thickens and loses its gloss.

Quickly fold in nuts and apricots and pour into your prepared fudge dish.

Chill in the fridge for at least an hour or until firm.
