Chewy Chocolate Coconut Slice

Ingredients

125g butter
200g soft brown sugar
1 egg, lightly beaten
1 tsp vanilla essence
110g plain flour
1 tsp baking powder
2 heaped tablespoons cocoa powder
3/4 cup coconut

ICING
1 cup icing sugar
1 heaped tablespoon cocoa
1 dessertspoon softened butter, diced
boiling water to mix

Description

A soft, slightly chewy slice, which is a wonderful treat slice.

Method

Preheat oven to 180C and grease and line a slice tin.

Melt butter, then pour into a separate bowl, and beat in sugar, egg and vanilla essence.  Stir in sifted flour, baking powder and cocoa powder.  Finally, mix in the coconut.

Spread mixture into prepared slice tin and bake for approximately 20 minutes, or until the slice springs back, when lightly touched.  The cooked slice, may also pull away from the sides of the tin.

When cooked, ice with chocolate icing, while the slice is still warm and sprinkle extra coconut over the icing.  Cool completely before slicing.

CHOCOLATE ICING

Sift the icing sugar and cocoa powder into a bowl, add the butter and mix together with just enough hot water, to form a spreadable consistency.  If you add too much water, you can always add more icing sugar to thicken the icing.
