Apple Walnut Cake
Description
A layered cake, with moist apple in the middle. Be careful not to burn the sugar and walnuts on the top of the cake. You may need to cover the top of the cake, at the end of baking, with baking paper to prevent the topping burning.
Method
Preheat oven to 180C. Grease & line a 22cm springform cake tin.
Cream butter, sugar and vanilla essence until light and creamy. Add eggs one at time, beating well after each addition. Stir in sour cream. Stir in sifted baking powder, baking soda and flour.
In a bowl, combine brown sugar, walnuts & cinnamon, set aside 1/2 cup. Add diced apple to the remaining mixture.
Spread 1/2 the cake mixture into prepared tin. Spoon in the apple mixture, then spread over the remaining cake mixture. Sprinkle the top of cake mix with the reserved walnut mix.
Bake for approximately 1 hour, or until cake pulls away from the side of the tin and springs back when lightly touched.
Leave in tin, for 10 minutes to cook, before removing the springform surround.
