My husband Murray is a very healthy eater, and it’s rare he’ll indulge in dessert. But if I make a French mille-feuille, he’s likely to have two helpings as it is his favourite dessert treat. The two layers of crisp puff pastry are filled with a dreamy mixture of creamy custard. The top is then covered with fresh raspberries glazed with raspberry jam.

When I was compiling the recipes for this book, I could not leave out my mother’s recipe for this rich, moist fruit cake. She has handed it on to me from her mother and I’d like to think it will continue to be cooked in future generations of our family. We don’t like icing, but you may wish to cover it with marzipan and then a white butter icing on top for a really festive cake.

I’m a fan of the small but growing saffron industry in New Zealand. I think about the painstaking care that goes into plucking those tiny precious stamens from each flower and marvel at the brilliant yellow hue they bring to food.

Serve these brilliant, shining pears as a simple show-stopper for dessert, accompanied by softly whipped cream or greek-styled yoghurt.
