There are so many different types of cheese pies in Greece.  Served sweet and savoury, they are simple to make good for a snack or dessert. In this recipe I have used a readily available cheese, feta, combined with cream cheese to dilute and soften its salty flavour, as fresh soft Greek cheeses are not always easy to find.

To get really crisp roasted veges, parboil the potatoes and kumara before they go in the oven. You can prepare and parboil the vegetables ahead of time, and do not have the oven too hot as the sweeter vegetables like kumara will burn.
