Rich Christmas Cake
When I was compiling the recipes for this book, I could not leave out my mother’s recipe for this rich, moist fruit cake. She has handed it on to me from her mother and I’d like to think it will continue to be cooked in future generations of our family. We don’t like icing, but you may wish to cover it with marzipan and then a white butter icing on top for a really festive cake.

A classic snack for morning or afternoon tea. To be enjoyed with a dollop of fine raspberry jam. Or make cheese scones and pack a couple for a snack on a short hike.
Sensational New York Cheesecake
There is only one size for this iconic cheesecake – big! It keeps well but I guarantee it won’t last long. It’s best to make this cheesecake the day before you intend to serve it and make no mistake, it’s well worth the effort.
