Spiced Parsnip and Coconut Soup
When Cuisine decided to celebrate the return to fashion of British food, I turned to the books of celebrated English food writer Jane Grigson for some ideas. Her favourite root-vegetable soup was curried parsnip. My version is spicier, using shallots and parsnip cooked in oil and butter with a mixture of spices, well-flavoured chicken stock, and a finishing touch of thick coconut cream.
Spicy Tomato Soup with Meatballs
As a child I loved tomato soup. My mother made terrific sweet tomato soup and we’d often accompany it with toasted cheese sandwiches on weekends. This tomato soup recipe has added texture and substance, with the tiny meatballs adding an appealing bite. Smoked paprika is worth seeking out for this dish and, combined with the orange, gives a real zing and depth of flavour to the pureed soup.
Winter Vegetable and White Bean Soup with Sausages
This may be the heartiest soup you ever try. Lots of warming vegetables, some white beans and Italian-style sausages make this the perfect filling lunch on a cold day. If you would rather have tiny chunks of lamb or beef in the soup, feel free to add those.
