Potato Varieties and How They Cook
There are many potato varieties grown in New Zealand, but there about 10 - 12 varieties which are 'common' and readily available. In addition there are a lot of varieties which have limited and/or localised supplies.

Roast Potatoes
Roast potatoes are hard to resist and are too good to save just for when you cook a whole roast meal!
Choose roasting, mashing or general purpose potatoes which have a floury texture.
Steak in a Jacket
Oven baked potatoes taste great. This same technique can be used with other fillings; instead of steak, try filling the jacket potato with a chicken or vegetable stir fry.
Stuffed Potatoes
These delicious stuffed potatoes can be made beforehand and reheated in the microwave or oven. Some potato varieties that tend to be all-purpose are: Rua, Desiree, Delcora, Karaka, Rocket, Stroma
Tuna and Potato Layer
There are many brands and flavourings offered when choosing tuna these days. This recipe is especially nice with Mediterranean or sun-dried tomato flavoured tuna.
