Spanish Cream with Strawberry Jelly and Fresh Strawberries
My mother and grandmother both made Spanish cream often as a dessert and I have used their recipe as the basis for my special Christmas version of this old fashioned classic. Totally easy and totally delicious.
Spiced Parsnip and Coconut Soup
When Cuisine decided to celebrate the return to fashion of British food, I turned to the books of celebrated English food writer Jane Grigson for some ideas. Her favourite root-vegetable soup was curried parsnip. My version is spicier, using shallots and parsnip cooked in oil and butter with a mixture of spices, well-flavoured chicken stock, and a finishing touch of thick coconut cream.
Spicy Meatballs with Artichokes
There’s something very satisfying about cooking a complete meal in one dish. Once it’s in the oven, I find I can relax, enjoy a glass of wine, and then I’m really in the mood to sit and savour the meal.
Finely minced pork is ideal for these spicy meatballs as pork has a soft texture and adds a lovely flavour to the rich sauce. Serve this spicy dish with a green salad, if you wish.
...Spicy Meatloaf, Mushroom Sauce and Roasted Beetroot
This spicy dish will make a great midweek dinner when you need something tasty to perk the family up, and there will always some leftovers for the next day. My favourite school lunches were sandwiches Mum filled with thick left-over slices of her tasty meatloaf.
Spicy Tomato Soup with Meatballs
As a child I loved tomato soup. My mother made terrific sweet tomato soup and we’d often accompany it with toasted cheese sandwiches on weekends. This tomato soup recipe has added texture and substance, with the tiny meatballs adding an appealing bite. Smoked paprika is worth seeking out for this dish and, combined with the orange, gives a real zing and depth of flavour to the pureed soup.
